  1. Preheat oven to 240ºC. Bring meat to room temperature 30min before cooking.

  8. Add a couple of dashes of white wine and cook for another 45min..
  9. check on your roast occasionally and baste and mix veggies if needed.
  10. Jamie Oliver recommends letting roast rest at room temperature for 15min before serving. Covered with tin foil snd a tea towel..
