- Prepare 2 kg of Fresh Crayfish.
- Prepare of Sliced ginger.
- Prepare 1 clove of Garlic.
- You need 1 bunch of Spring onion.
- You need 3 of finger chillis.
- Prepare of Sichuan Peppercorns.
- Prepare of Sichuan Chilli.
- It's of Salt.
- Prepare of Sugar.
- It's of Chicken powder.
- You need of Oyster sauce.
- You need of Chinese cooking wine.
Spicy and Hot Chinese Style Crayfish instructions
- Wash the fresh crayfish.
- Cut off the Crayfish legs. Be careful not to cut off their claws as there is plenty of meat in these as well.
- Heat up some oil in a wok and then add all the spices and fry until you smell the aroma of the spices.
- Add the fresh Crayfish into the wok and fry together with the spices.
- Add boiling water to the wok until it covers all of the crayfish.
- Add oyster sauce, cooking wine, salt, sugar and chicken power and stir the Crayfish. Boil the Crayfish for 15mins with the lid on the wok.
- When finished take the Crayfish out and place them onto a plate ready to serve.
