  8. You need 2 of chopped ridge gourd.

Ridge Gourd is the English name. This Ridge Gourd curry (Turai ki subzi) uses very basic ingredients and spices. Start the pressure cooker or instant pot in sauté mode. Add oil, cumin, green chili, ginger and garlic.

  2. Now add chopped green chilli and tomatoes in it and cook for two minutes then add all spices(salt, turmeric powder,red chilli and coriander powder)..
  3. Cook for 5 minutes then add chopped ridge gourd in it..
  4. Cook it well by adding little amount of water and by cover the kadai it in between..
  5. After 15-20 minutes sabji is ready to serve with chappati..

I used finely diced ginger and garlic. In north India ridge gourd curry is called Turai ki sabji and in Andhra we call it Beerakaya kura. Traditionally ridge gourd curry uses onion, tomato and green chilly. Today I am using red chilly powder,garam masala and peanuts. Simple basic ingredients which are easily available at home, goes into making this sabji.
